Sugar Glazed Sweet Potatoes consists of only two ingredients, sweet potatoes and white sugar. It is a famous traditional dish from Han ethnic group. Simple as it appears, it really puts to test how well a chef can master heat control.
Sugar glazed dishes are meant to be served immediately. When the dish is hot, taking a piece from the plate will drag out strings of “candied floss” that will harden with cold air, making it a not only tasty but also fun dish to eat.
- Sweet potato wedges
- White sugar
- Cut sweet potatoes into wedges.
- Fry sweet potatoes in medium heat until it appears golden. Drain the oil and set aside.
- Simmer sugar in low heat and stir until sugar has dissolved.
- Bring back sweet potatoes to the wok and make sure all sides are coated with sugar syrup.
- Serve immediately.
You can substitute sweet potatoes with most root vegetables, such as potatoes, Chinese yam, purple yam, taro, and chestnuts. Sugar glazed apples and sugar glazed bananas are also popular dishes in China, but they require a different cooking method.
