Changwon Masan Spicy Braised Monkfish becomes a brand name now. It is a delicious dish that everyone knows in Korea. It is also a typical Korean spicy dish.
In the past, because of its ugliness and unpleasant taste, monkfish were thrown back to ocean when caught. Masan’s special recipe made it so delicious and enormously popular. Spicy Braised Monkfish started at crossroad of Odong-dong district in Masan city. It consists of stir-fried soybean sprouts, Korean watercress, ascidian (a sea squirt), chili powder and chili paste.
As for Changwon Masan Spicy Braised Monkfish, only monkfish caught between February and September and sun-dried for 20-30 day are used. Besides chili powder, soybean paste is added in the cooking process. This can completely remove the original smell of fish. Monkfish taste very special. Its meat is firm with a texture similar to lobster and is palatable and chewy.
Changwon Masan Spicy Braised Monkfish Recipe
Monkfish (large chunk pieces)
Styela clava (sea squirt)
Watercress (cut into 1.5 inch pieces)
Starch (diluted in water)
1. In a cooking pan at high heat, add monkfish, pre-made special broth, sea squirt and soybean sprouts on top (note: make sure sprouts cover all ingredients underneath). Then cover cooking pan for 3 minutes.
2. Open the lid, add the following ingredient in this order: scallion (1-inch pieces), garlic, secret seasoning (prepared beforehand), chili powder, salt and starch, stir and mix thoroughly. Then stir in watercress. Cover for 20 seconds.
3. Open cover, add sesame oil and sesame seeds.
Direction for making special broth:
In a large cook pot, add water, monkfish born, garlic (whole head), ginger, scallion(split in the middle cut into 1.5-inch pieces), onion, kelp, and cook for 1 hour. Drain then add 1 tablespoon of soybean paste in broth.
Direction for making secret seasoning:
Put dried mussel, dried kelp, dried shrimp, dried mushroom in blender and grind into powder.
