●3 boneless chicken thighs
●15 basil leaves
●2 bay leaves
●30g tomato paste
●Appropriate amount white wine
●Appropriate amount potato starch
1. Wash basil and bay leaves. Wash and cut tomatoes into pieces. Remove onion skin and cut into diamond pieces. Wash and cut chicken thigh into pieces and marinate with white wine, salt and potato starch for 20 minutes.
2. Add chicken thigh in a pan and sear both side until turning golden. Add tomato paste, onion, potatoes and stir fry until fragrant. Turn to low heat and cook until potato is cooked through.
3. Add basil and bay leaves, and stir fry until fragrant. Transfer to a plate and serve.
Homemade Tomato Paste
The texture of tomato paste is thick with rich aroma and acidity which can deepen the flavor of the dish. You can make tomato paste at home without any chemical additives as sold in stores. First remove tomato skin and crush tomato flesh. Saute minced garlic with 2 tbsp olive oil until fragrant. Add half minced onion and stir fry until the fragrant is sweet. Add tomato flesh and stir frequently until boil. Turn off the stove and season with salt and pepper. Then the healthy homemade tomato paste is done.
