BBQ Pork Fried Rice

For the pork
1 lb. pork tenderloin
¼ cup green onion
¼ cup ginger, slice
1 cup water
¼ cup soy sauce
¼ cup brown sugar
¼ cup bbq sauce
1 tablespoon honey

For the fried rice
4 eggs, beaten
2 cup cooked rice
1 onion, chopped
1 tsp salt
1 tsp pepper
½ cup cabbage, chopped
¼ carrot, diced
¼ broccoli, diced
¼ shiitake mushroom, diced
2 tablespoons vegetable oil
2 tsp soy sauce
2 tablespoons oyster sauce
2 tablespoons green onion, chopped

1. In a hot oil wok, deep fry the pork tenderloin until the surface changes to golden brown color. Drain the oil. Get the oil temp to 375 degree and re-fry the pork for 30~40 seconds to seal the juice. Remove the pork from the oil.

2. In the wok, add the green onion, ginger, water, soy sauce, brown sugar, bbq sauce and honey. Mix the ingredients well and bring to boil. Add the deep fried pork to the sauce mixture and simmer for 30 minutes.

3. Transfer the bbq pork to the cutting board. Cut the pork into 0.5 inch cube.

4. In the hot wok, add oil and beaten eggs. Stir fry the eggs until cooked. Add the cooked rice and mix well. Add salt and pepper to the rice and stir well together.

5. Add cabbage, carrot, broccoli, and shiitake mushroom to the fried rice and mix well. Then, add diced bbq pork, oyster sauce, and green onion. Stir them well together.

6. Enjoy!
